Cousins Unite
This Thanksgiving we spent much time with the family. We had a great time, ate wonderful food, and enjoyed time to hang out. (On a sad note, I forgot to take very many pictures at all!)
Corbin especially had a great time with his cousins.
Corbin started off his weekend hanging with cousin Blake.
Corbin did an outstanding job of being gentle and sitting with Blake doing six month old type activities. They played very well together; it was very sweet.
Later in the weekend we spent some time with cousin Collin. Collin is two, Corbin’s one, and as you can imagine the activity and noise level were much higher. These two provided endless entertainment for the adults!
There were many great moments, but one of my favorites was when Corbin and Collin were asked their age (again remember Collin is 2 and Corbin is 1)
“Collin how old are you?”
“3”
“Corbin how old are you?”
“2”
Awesome…without hesitation they both quickly replied with an age that is a year older than they really are. Loved it! This question was asked and repeated various times throughout the day and it never failed to make me giggle!
Corbin’s looking forward to more cousin time this Christmas!

Kars (I know how to spell, but I’m working with limited letters! Corbin could not make a thankful list without including his cars!)

What the What and Wordless Wednesday
I took some really cute pictures for a Wordless Wednesday post. However, after taking countless, memory making, priceless, cute pictures I discovered that the memory card was not in the camera. It was still in the computer, sad:(
So, I’m going to try and capture some cute pictures of Corbin now, but cuteness doesn’t always happen on demand around here. That being said there might not be a Wordless Wednesday post until next week. We’ll see what the rest of the day has…cute or not cute…that will be the question.

Fall Harvest Pumpkin Roll
My Pintrest addiction, as described in an earlier post, is now going to benefit all of you!
I tried a recipe I had pinned and it was fabulous. So I thought I would share it.

Fall Harvest Pumpkin Roll
Cake:
1 cup sugar
2/3 cups pumpkin
3 eggs
1/2 tsp baking soda
1/2 tsp salt
3/4 cups flour
1 tsp cinnamon
Filling:
1 (8 oz) pkg cream cheese
2 tbsp butter, softened
1 tsp vanilla
1 cup powdered sugar
Directions:
Preheat oven to 375. Spray a jelly roll pan with cooking spray or lightly spritz with water. This is to hold the waxed paper in place. Then line the pan with waxed or parchment paper. Spray the paper with cooking spray.
Combine the sugar, pumpkin and eggs; mix well. Add the soda, salt, flour and cinnamon; mix well.
Spread the batter in pan evenly. Bake 14-18 minutes. (Do Not Over Bake). Cover the pan with a clean dry dish towel then top with a wire cooling rack. Immediately invert pan onto hand/dish towel.
Peel off paper. With the long side in front of you, roll the cake up in the towel. Let cool rolled up.
Combine filling ingredients, mixing well. Unroll the cake, remove the towel, spread filling evenly. Roll cake back up (without the towel), wrap with plastic wrap and refrigerate.
It was VERY easy to make and SUPER delicious.
Now that’s my kind of combination….easy and delicious…yes please!

What the What Wednesday – Green Beans
I purchased a can of unsalted green beans at the store. Really there’s only one word for them…yuck. After years of eating the regular canned green beans these leave something to be desired. So first of all…what the what that I picked up the wrong can!
I’m starting to feel old. This is what old people do…pick up the wrong things because there are so many choices and you really have to read to see what you’re getting. And in fact, with the green beans I agree. The cans are exactly the same except for the two words no salt above the title green beans. Really, I have a child with me, I don’t read that closely.
Anyway, I didn’t realize I had made this mistake until dinnertime. We were having spaghetti and Corbin had finished his first helping and wanted more. However, he hadn’t touched his green beans. He was told he had to eat some beans before he could get more pasta.
So he put one in his mouth, chewed, and spit it out. This is completely odd because Corbin likes green beans. Chris and I knew something was amiss so we tried the beans and, being the adults we are, gagged the bean down.
Crap! The beans were kind of gross. That’s when I looked closely at the can and noticed my mistake. So I amended and took out three beans and put them in front of Corbin to eat. (In all fairness I ate three myself…they weren’t that bad).
Ok, this boy took the bean to his mouth, pretended to eat it but then let the beans fall into his highchair where they could not be seen. All three beans…what the what! This boy is already trying to be sneaky?!?
Then he proceeded to say “All done, more pasta please.” Yes, the please came unprompted and as you can imagine it was said in the sweetest way.
Oh my goodness, Chris cracked right there and had to hide his laughing face behind his napkin while “Stonefaced Mamma” dealt with the situation. Ok, I cracked too, but only for an instant.
Corbin got another three beans in front of him as I pulled the three fallen beans from the chair to show I had seen what happened. He did eat the three new beans, albeit with great flair and dramatics. The faces of disgust and repulsion were amusing but I’m happy to report that he survived, got more pasta, and the beans were not seen again that evening.
What the what!?!? Corbin is already trying to pull a fast one on us. Oh my! What does the future hold. :)

Family Fun
We spent some time at Grandma and Grandpa’s house Saturday. Uncle Brent, Aunt April, and Cousin Collin were there along with Grandma’s parents from New Jersey!
We had a great time visiting and the boys had a blast….
playing with everyone….

Sunset in the Clouds
Corbin worked on an abstract piece of art the other day. The puffy white cotton balls and the multicolored scribbles lent itself to the title “Sunset in the Clouds” by Corbin.
Anyone interested in purchasing such a masterful piece of art work? ;) Corbin’s college fund could always use a few more dollars!

Our Book Recommendation
Corbin LOVES to read books. Don’t get me wrong, I love that he loves to read. But oh my, there are some days where I just can not handle reading the SAME book again and again and again and again….
But I know that repetition is important, so I do it. We own many books, but to keep things interesting for me and Corbin, I have been going to the library every few weeks to pick out some new books. (Although when I have to return them and they are no longer in the house…well you can imagine Corbin is devastated for a few hours and does not understand. But that’s another issue:)
Anyway, this week I found a book that both Corbin and I enjoy reading. (That’s always a plus when it’s read at least 20 times in ONE day. Really it’s not an exaggeration…I only wish it were)
Dog’s Colorful Day by Emma Dodd is an awesome book. It incorporates color recognition and counting into an engaging story about a dog who becomes filled with colorful dots during a busy day.
Corbin enjoys finding the different colored dots on the dog and seeing the dog become more and more colorful as the story progresses.
I like the number aspect of the story because it is a visual and interactive way to count the spots on the dog.
If you are looking for a good read, try Dog’s Colorful Day! It has received two thumbs up in our house:)

Trunk or Treat –Two by Two
Our family participated in our church’s trunk or treat again this year. Last year we created a farm, but this year we went with a more biblical theme…Noah’s Ark.
On this ark Noah had two very special lions!
I will not name names, but one lion was very helpful and passed out candy while the other lion played and ran around with the candy. Let’s just say Noah had his hands full with both of them:)
Yea for trunk or treat…Noah’s Ark style!
