Cool Summer Treat

This dessert is light and refreshing; perfect for a summer evening treat.

Luscious Key Lime Dessert

(found at bettycrocker.com)

1 pouch oatmeal cookie mix

½ cup firm butter

2 cans (14 oz each) sweetened condensed milk

¾ cup Key lime juice or lime juice

2 containers (8 oz each) frozen whipped topping, thawed

2 containers (6 oz each) Key Lime pie yogurt

1 tablespoon grated lime peel (I did not use)

½ cup fresh berries (this is to top with if you would like I just served strawberries on the side)

Instructions:

1. Heat oven to 350. Spray bottom and side of 13x9 inch pan with cooking spray.

2. Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and course. Lightly press crumbs in bottom of pan. Bake 10-12 minutes or until golden brown. Cool.

3. In large bowl, beat condensed milk and lime juice with electric mixer on medium speed until smooth and thickened. Remove 1 cup of the whipped topping; set aside (I did not do this and just used all my topping). Fold remaining whipped topping and yogurt into milk mixture. Spoon into cooled crust. Cover and refrigerate about 1 hour or so until set.

4. To serve, cut into 5 rows by 4 rows (I REALLY appreciate having these specific directions because when I go to cut something I always wonder how many pieces or how big. This takes out all the guess work…go Betty Crocker!) Garnish each serving with a dollop of remaining whipped topping, lime peel, and fresh berries. Cover and refrigerate any remaining dessert.

Corbin’s Water Adventures

Fabulous Friday Find

I’m not a huge sweets person, but one evening we decided to treat ourselves to a dessert and Chris and I both agreed on ice cream.  Chris went into the store and returned with this…

It is the most amazing ice cream I have had in my life.  I am dreaming about it in my sleep, craving it when I’m awake, and literally holding myself back from taking a bite every time I go by the freezer.  This ice cream is a must try for the summer…can you think of a more delicious way to beat the heat?

14 Months

This big boy is 14 months today!

I guess in 14 months we still haven’t figured everything out. For example, the above toy is for cars and not for Corbins, but that’s the creative part of growing up:)

In 14 months Corbin has developed a deep obsession for cars, cars, cars!  Every car we see, every car we play with elicits a “vrooom” sound from Corbin.

In 14 months Corbin has become such a big boy. One of his knew “big boy” discoveries was learning how to crawl up on the couch.  It’s a very cool place to play these days!

Study Buddy

Playgrounds

Corbin and I have been spending several summer mornings at a couple of different parks around town.

This boy has developed some skills on the slide.  I cannot express my deep appreciation and delight that he has learned how to get himself up to the slide (only small ones…that’s me, I’m a mom, I worry:) and then get himself sliding down where I’m at the bottom to assist if it should be needed.  My arms and back are so very thankful as well.  That boy was getting heavy to lift up onto the slide!

He also loves to swing, which has always been a favorite for him.  But now when I take him out and he’s not ready to be done swinging I hear about it.  He certainly places a rather strongly worded request to let me put him back up into that swing.

This morning we ate our morning snack at the park, and by the bench was a puddle of water.  He began playing in it and having a great time and I began to wonder where did this water come from and should I be letting my child play in this unknown water source?  Well, I just tried not to think about any specifics and let him play in it for a few minutes.  I’ll let you know if he contracts some rare disease and we can all look back and then judge that I made the wrong decision…I’m sure he’ll be fine:)

A Boy At Play

Spending time outside is a favorite activity of Corbin’s.  Here are a few things he likes to do:

Watch cars go by and tell me all about them.

“A big white truck just went by momma!”

He likes to check out momma’s wheels.

“We are all safe and ready to roll!”

He carefully points out ants. 

“I’m just pointing momma, not squishing, promise!”

Corbin loves to climb up stairs.

“Come on momma, climb with me!”

And a skill that early practice will pay off is mowing the lawn. I’m sure he will be doing that for real as soon as he’s able.

Being outside is certainly an adventure for Corbin.  The most mundane things become so interesting and fascinating to him.  I do enjoy watching him explore and discover, but being outside with him is exhausting!  We are always on the go and he’s keeping me on my toes.
